Liz here: Al and I were served this soup by his niece over the holidays and liked ita lot.
2 cans pinto beans, drained
1 1/2 lg. boxes beef broth
2 bay leaves
4 slices of bacon, chopped
1 onion, chopped
4 cloves garlic, minced
3-4 fresh jalapenos, minced
1 can (12 oz) diced tomatoes
2-3 tbs. fresh cilantro (optional)

Render the fat from the bacon and add onions, garlic, and jalapenos. Cook till soft. Add all other ingredients and simmer, covered, till flavors have blended. (This adapted from a baked bean recipe to which more stock has been added to create a soup. Also, the original uses dried beans instead of canned.)
